COTW APPLE CINNAMON SCONES

COTW APPLE CINNAMON SCONES

Bake up a batch of these delicious apple pie inspired scones featuring Cream of the West Roasted 7-Grain and our local Bear Luv-Un cinnamon honey to welcome fall! 

INGREDIENTS

  • 2 cups all-purpose flour
  • 2/3 cup Cream of the West Roasted 7-Grain
  • 1/4 cup sugar
  • 1 Tbsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • ½ cup butter – cold
  • 1 large apple – peeled and chopped
  • ½ cup milk
  • ¼ cup cinnamon honey

TOPPING

  • 2 Tbsp Cream of the West Roasted 7-Grain
  • 1 Tbsp turbinado sugar
  • 1 Tbsp brown sugar
  • ½ tsp ground cinnamon
  • ½ tsp vanilla
  • 2 Tbsp milk

Directions

Preheat oven to 400 degrees and line a baking pan or pizza stone with parchment paper.

In a large bowl combine flour, 7-Grain, baking powder, cinnamon, baking soda, salt, and nutmeg.

Cut in cold butter with a pastry blender or pulse in a food processor until the mixture resembles coarse meal.

In a smaller bowl combine milk and honey, add in chopped apple, and stir to coat. Add this mixture to dry ingredients and toss gently.

Turn dough out onto floured work surface. Flour hands and knead gently, 3 or 4 folds until dough is combined. Dough will be sticky, but you can add up to ¼ cup more flour if necessary.

Form the dough into a 9 – 10-inch circle about ½ inch in thickness.

Cut into 8 wedges and separate them to give about an inch of space between them.

In a small bowl or measuring cup combine vanilla and milk. Brush this mixture lightly over each wedge.

Add remaining topping ingredients to milk and vanilla mixture and mix well.

Sprinkle topping over each wedge.

Bake for 25 minutes at 400 degrees or until scones are golden brown.

Enjoy straight out of the oven or add a dollop of butter and a swirl of cinnamon honey. 😋
