MIXED BERRY BAKED 7-GRAIN “OATMEAL”

 It's super easy to make, fills the kitchen with wonderful aromas and is a great way to start the day with nutrient packed whole grains and berries. Cream of the West Roasted 7-Grain cowboy cereal.

INGREDIENTS:

2 1/2 cups Cream of the West Roasted 7-Grain

1 tsp cinnamon

1 tsp baking soda

½ tsp sea salt

3 cups milk or almond milk

1 tsp vanilla

2 tbsp butter or coconut oil – melted

1 egg – whisked

1/3 cup maple syrup

1 ½ cups fresh or frozen berries

 

DIRECTIONS

Preheat oven to 375 degrees. Grease a 9 x 9” baking dish

Combine all dry ingredients, stir with a fork and pour into baking dish.

In the same mixing bowl combine wet ingredients, whisk until well mixed.

Pour wet mixture into baking dish and stir to combine well with dry ingredients.

Sprinkle berries on top of mixture.

Bake 35 – 40 minutes until top is golden brown.

Allow to cool slightly before serving. Top with a splash of cream, maple syrup, cinnamon or brown sugar.

Store in fridge for up to 5 days or freeze for up to 2 months. Reheat in oven or microwave.
