Old West Tamale Pie

An old Cream of the West favorite!

 OLD WEST TAMALE PIE, an old Cream of the West dinner or lunch favorite!

INGREDIENTS

3 Tbsp olive oil or butter

1 small mince onion

1 clove garlic, minced

1 lb. ground beef

½ lb. pork sausage

1 can diced tomatoes

1 can kernel corn, drained

2 tsp. salt

1 Tbsp chili powder

Black olives

2 eggs

1 ½ cups grated cheddar cheese

1 cup milk

1 cups Cream of the West Roasted Wheat

 

GARNISH AND TOPPING

Cilantro

Fresh tomatoes

Green onions

Sour cream


DIRECTIONS

Preheat oven to 350°. In a medium pan heat olive oil or butter and sauté’ garlic and onion, about 5 minutes. Add ground beef and pork sausage and cook until browned.

Add tomatoes, corn, salt and chili powder. Simmer 15 minutes. Remove from heat and add about 30 olives. Pour meat mixture into an 11 x 17 baking dish.

In a separate bowl, beat eggs and add milk, cheese and Cream of the West Roasted Wheat. Mix well.

Pour mixture over the meat layer and spread evenly to cover. Garnish the top with sliced black olives and bake for 1 hour.

Serve with sour cream, cilantro, fresh tomatoes and green onions.
