7-GRAIN PEANUT BUTTER CHOCOLATE CHIP PROTEIN BITES
You can call these cookies if you want to. You’ll never miss the sugar in these delicious healthy treats. Packed with protein and whole grains everyone in the family is going to love them!
Ingredients
- ½ cup soft butter (room temp)
- ½ cup maple syrup
- ½ cup peanut butter
- 1 large egg
- 2 tsp vanilla
- 1/3 cup Cream of the West Roasted 7-Grain
- 1/3 cup boiling water
- 1 2/3 cup flour
- ¼ cup unflavored protein powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup semi-sweet chocolate chips or chunks
Directions
Add 1/3 cup Cream of the West Roasted 7-Grain to 1/3 cup boiling water. Stir and let sit at least 5 minutes.
Beat softened butter until whipped and creamy. Add maple syrup, peanut butter, egg and vanilla. Beat well between each addition.
In a separate bowl combine flour, protein powder, baking soda, and salt.
Stir soaked 7-Grain into peanut butter mixture. Add dry ingredients and mix until combined.
Fold in chocolate chips or chunks.
Chill 90 minutes or overnight.
Preheat oven to 350°.
Scoop chilled dough by tablespoon full onto parchment covered baking sheet. Spacing dough balls 2 inches apart.
Bake 9 minutes, remove baking sheet and tap on countertop 4 or 5 times to deflate cookies. Return to oven and bake 4 minutes more. Remove from oven and tap again on countertop before moving cookies to baking rack to cool.
