CHERRY ALMOND BARS
Bursting with the vibrant taste and color of fresh cherries and the added benefit of wholegrain goodness, these bars make an excellent grab and go breakfast or snack anytime!INGREDIENTS
- 1 1/2 cup Cream of the West Roasted 7-Grain
- 1/2 cup flour
- ½ cup brown sugar
- 1/3 cup chopped almonds
- ¼ tsp salt
- ¼ tsp baking soda
- 1/3 cup coconut oil (or your favorite oil) melted
- 2 ½ cups pitted fresh cherries – chopped
- 2 Tbsp lemon juice
- 1 Tbsp maple syrup or honey
- 1 Tbsp cornstarch
Directions
Preheat oven to 350 degrees. Line an 8 x 8” square baking dish with parchment and grease with butter or oil.In a bowl combine Cream of the West Roasted 7-Grain, flour, brown sugar, almonds, salt and baking soda. Pour melted oil over mixture and stir until combined.
In another bowl, combine cherries, lemon juice, syrup or honey, and cornstarch. Mix well.
Set aside one cup of the 7-Grain mixture. Press remaining into prepared baking dish.
Top with cherry filling, spreading evenly into corners. Sprinkle remaining cup of 7-Grain mixture over cherry topping.
Bake for 30 minutes or until top begins to brown. Allow bars to cool completely, cut into squares and enjoy!
