Chocolate Chip Muffins

“These are our favorite traveling breakfast along with hard boiled eggs.” 

 Cream of the West chocolate chip muffins are made with whole grain Cream of the West Roasted Wheat

Mix together in a bowl and let soak while preparing the flour mixture:
3/4 cup Cream of the West Roasted Wheat
1 1/2 cups buttermilk

Measure flour mixture and set aside:
1 cup white flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda

Add the following to the mixture in the bowl and stir to combine:
1/3 cup canola oil
1/3 cup packed brown sugar
1 egg
1 tsp vanilla

Stir in the flour mixture and then add about
3/4 cup of dark chocolate chips

Spoon into prepared muffin tin.
Bake 350 degrees about 15 minutes.
Let cool and enjoy!
