These chocolate peanut butter 7-grain cups are super quick and easy to make. With no added sugar, they make such a tasty, sweet treat anytime!
INGREDIENTS
- 3 cups Cream of the West Roasted Organic 7-Grain
- 3/4 cup peanut butter
- 1/3 cup honey
- 5 ounces semi-sweet chocolate chips
- 1 Tbsp. coconut oil (or your favorite vegetable oil)
DIRECTIONS
Heat the peanut butter and honey in a small saucepan over medium-low heat, stirring frequently, until warm but not hot. Add the 7-grain to the peanut butter mixture and stir until combined.
Spoon the oat mixture evenly into a silicone or non-stick 12-cup muffin pan (approximately 1/3 cup of the 7-grain mixture per baking cup). Use a spoon to press the mixture firmly into each baking cup.
Melt chocolate chips and coconut oil in small saucepan over medium-low heat, stirring frequently, until the chocolate is completely melted and smooth. Remove pan from heat. Spoon approximately 1 tablespoon of chocolate on top of each oat cup, spreading the chocolate so that it covers the top of each cup.
Place pan in the freezer and chill for at least 1 hour, or until the 7-grain mixture is firm.
Pop 7-grain cups out of muffin pan and serve immediately. You can store any remaining oat cups in the freezer until ready to serve.
