COTW APPLE FRITTER CAKES
Cream of the West Apple Fritter Cakes are the perfect combination of crisp new crop apples and fall flavors.
INGREDIENTS
- 2 medium apples peeled and chopped
- ½ cup light brown sugar
- 1 heaping teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1 large egg - room temperature
- ⅓ cup white granulated sugar
- ¼ cup vegetable oil
- ¼ cup full-fat sour cream - room temperature
- 2 teaspoon vanilla extract
- 1 cup all-purpose flour
- ¼ cup Cream of the West Organic Roasted Wheat
- 1 ¼ teaspoon baking soda
- ½ teaspoon salt
Glaze
- 1 cup powdered sugar sifted
- 1 teaspoon vanilla extract
- 3 tablespoon milk
Directions
Preheat your oven to 350 degrees. Prepare small loaf pans or large muffin tins with nonstick baking spray.
In a medium mixing bowl, mix the chopped apples, brown sugar, cinnamon, and ginger together. Set aside.
In a large mixing bowl, whisk together egg, sugar, vegetable oil, sour cream, and vanilla until well combined.
In a separate bowl, whisk together flour, Cream of the West Organic Roasted Wheat, baking soda, and kosher salt.
Using a rubber spatula or wooden spoon, Add dry ingredients to wet ingredients and mix until almost completely mixed in.
Fold in ¾ the amount of the apple-cinnamon mixture into the batter, then pour into your prepared pans.
Top the apple fritter cakes with the remaining apple chunks and bake for around 20 minutes, (less for if you are using standard size muffin tins) or until a toothpick inserted in the center comes out with a few moist crumbles.
Glaze
In a small mixing bowl, whisk together the powdered sugar, vanilla extract, and milk until it comes to a smooth consistency.
Pour the glaze over the fritter cakes generously before serving.
Enjoy straight out of the oven! Store leftovers in an airtight container and reheat slightly before eating.
