COTW BLUEBERRY BUCKLE
This delicious treat makes a wonderful coffee cake or dessert.
CAKE
¾ cup sugar¼ cup shortening
1 large egg
1 tsp vanilla
2 cups flour
1/3 cup Cream of the West Roasted Wheat
2 tsp baking powder
½ tsp salt
¾ cup milk
2 cups fresh or frozen blueberries
TOPPING
½ cup white sugar1/3 cup flour
½ tsp cinnamon
¼ cup cold butter, cubed
DIRECTIONS
Preheat oven to 375° . In a large bowl combine flour, Roasted Wheat cereal, baking powder and salt. In another bowl cream shortening and sugar. Add egg and vanilla, mix well. Slowly add flour mixture to shortening mixture, alternating with milk. Gently fold in blueberries and pour into a greased 8x8” baking pan.To prepare topping, combine flour, sugar and cinnamon. Cut in small cubes of butter until mixture is crumbly. Sprinkle topping over batter in pan. Bake 40 - 45 minutes or until lightly brown and toothpick inserted in center comes out clean.
