COTW WHOLE GRAIN CHILI
A hearty, smoky chili recipe supercharged with roasted Cream of the West whole grains.
INGREDIENTS
- 1 ½ lb. ground beef – browned
- 2 Tbsp oil (olive or vegetable)
- ¾ cup onion – chopped
- 1 clove minced garlic
- 1 bell pepper - diced
- 3 Tbsp to ¼ cup chili powder
- 1 tsp smoked paprika
- ¼ cup Cream of the West Roasted Wheat
- ½ cup Cream of the West Roasted Ranch Oats
- 1 can Rotel diced tomatoes and chili peppers
- 2 cans V-8 juice
- 1 can tomato soup
- 1 can black beans – drained
- 1 can kidney beans - drained
- 1 tsp salt
- ½ tsp black pepper
Optional Toppings
- Sour cream
- Grated cheddar
- Queso Fresco
- Fresh cilantro
- Tortilla chips
- Fresh onion
Directions
Brown ground beef, drain and set aside. Add olive oil to pan. Sauté onions, garlic, and bell peppers for 4 - 5 minutes. Stir in Cream of the West Roasted Wheat and Roasted Ranch Oats. Add chili powder, smoked paprika, salt and pepper, drained beans, V8, tomato soup and 2 soup cans of water. Return ground beef to pan and stir well. Simmer for at least 45 minutes to allow flavors to meld. Taste and add salt, pepper, or chili powder to taste.
