CREAM OF THE WEST COCONUT MACAROONS

INGREDIENTS
14 oz. sweetened coconut flakes
1 can (14 oz.) sweetened condensed milk
1/2 cup cooked Cream of the West Roasted Wheat
2 tsp. vanilla extract
1 ½ tsp. almond extract OR zest of 1 orange
DIRECTIONS
Preheat oven to 350 degrees. Grease cookie sheets or line with parchment paper.
In mixing bowl, combine all ingredients and mix well. Drop by rounded teaspoonfuls onto cookie sheets. Bake 8 – 10 minutes or until lightly browned. Remove from cookie sheets to cooling racks. If you are a chocolate lover, drizzle with melted semisweet chocolate. Store loosely covered at room temperature.
Makes about 4 dozen cookies.
