CREAM OF THE WEST ORANGE COFFEE CAKE
An old Cream of the West favorite
¾ cup sugar
¼ cup soft shortening
¼ cup Cream of the West Roasted Wheat
¼ cup orange juice
¼ cup milk
1 ¼ cup sifted flour
2 tsp. baking powder
½ tsp. salt
2 tsp. grated orange rind
2 Tbsp. butter diced into small pieces
½ cup brown sugar
2 tsp. cinnamon
2 tsp. orange rind
Preheat oven to 375°. In a medium bowl cream together shortening, sugar and Cream of the West Roasted Wheat. Add egg, milk and orange juice. Mix until well blended.
Sift together flour, salt and baking powder. Stir into creamed mixture. Blend in orange rind.
Spread into a greased 9 x 9” baking pan.
Mix all topping ingredients and sprinkle over batter.
Bake at 375° for 25 – 30 minutes.
