GRUFF GRITS WITH SAUSAGE GRAVY
INGREDIENTS
- Gruff Grits prepared according to the directions on the package (2 cups: 2 1/2 cup of water and set aside
- 1 lb pork sausage (pasture raised is preferable)
- 3 Tbsp butter
- 1/3 cup organic all-purpose flour
- 3 to 3 1/2 cup milk
- 1 tsp granulated garlic
- 1/2 tsp thyme
- 1 tsp black pepper or to taste
- 1/2 tsp salt or to taste
Directions
Boil 2 1/2 cups water. Add 2 cups grits and cook according to package directions.
Brown the sausage in butter, because extra fat makes better gravy! Once the sausage is nicely browned and aromatic, add the flour. Let it cook for several minutes on medium heat before adding the milk, until the flour has absorbed into the fat.

Finally, to make the gravy, add the milk and stir continuously over heat until the gravy thickens. Serve over ancient grain grits.
