ROASTED WHEAT FRUIT PIZZA
- ½ cup butter – softened
- ½ cup sugar
- 1 egg
- 1 tsp vanilla
- ¾ cup all-purpose flour
- ½ cup wholewheat flour
- ¼ cup Cream of the West Roasted Wheat
- ¼ tsp salt
- 4 oz cream cheese – softened
- 1 ½ Tbsp vanilla Greek yogurt
- 2 ¼ cups powdered sugar
- 2 – 5 cups assorted fruits to top
Preheat oven to 325 degrees.
In a medium bowl, cream the butter and sugar 1 – 2 min. Don’t overmix.
Add in egg and vanilla and beat just until incorporated.
In a small bowl mix flours, Cream of the West Roasted Wheat, and salt. Add slowly to butter mixture and beat until just combined and dough pulls together into a ball.
Press dough out into a 10-inch circle, on a piece of parchment paper, then transfer paper with dough to baking sheet. Bake at 325 degrees for 16 minutes. Cool on a baking rack.
To prepare topping, combine, cream cheese, yogurt, powdered sugar, and vanilla. Blend until smooth.
Slice or cut fruit and berries into the shapes and sizes you want.
Once crust is completely cool, spread with cream cheese mixture and top with fruit. Serve immediately.
