Roasted Wheat Ginger Snaps

1 ½ cup shortening
2 cups sugar
½ cup molasses
3 cups flour
2 Tbsp ginger
2 tsp baking soda
1 cup Cream of the West Roasted Wheat
1 tsp salt
Cream together shortening and sugar.
Beat in molasses and eggs.
In a separate bowl mix together dry ingredients and then add slowly to shortening mixture.
Stir well. Form small balls and roll in sugar.
Place balls on ungreased cookie sheet – do not smash balls of dough.
Bake at 350 degrees for 11-12 minutes.
