Western Honey-Fruit Muffins

Ingredients

¾ cup Cream of the West Roasted Ranch Oats
½ cup Cream of the West roasted 7-Grain
½ tsp baking soda
¼ tsp salt
1 ½ tsp baking powder
1 ½ cups whole wheat flour (or 2 cups all-purpose)
1 cup milk (use only ¾ cup if using all-purpose flour)

Directions

Combine dry ingredients in a mixing bowl. Make a well in the center of dry ingredients.

In a separate bowl mix together milk, egg white, oil and honey.  Pour liquid mixture into center of dry mixture and stir until moist. Fold in fruit.

Bake at400 degrees for 17 – 20 minutes in greased or lined muffin tin.

Makes 12 muffins
