Western Honey-Fruit Muffins

Ingredients

¾ cup Cream of the West Roasted Ranch Oats
½ cup Cream of the West roasted 7-Grain
½ tsp baking soda
¼ tsp salt
1 ½ tsp baking powder
1 ½ cups whole wheat flour (or 2 cups all-purpose)
1 cup milk (use only ¾ cup if using all-purpose flour)
1 cup blueberries or other fruit.

Directions

Combine dry ingredients in a mixing bowl. Make a well in the center of dry ingredients.

In a separate bowl mix together milk, egg white, oil and honey.  Pour liquid mixture into center of dry mixture and stir until moist. Gently fold in fruit.

Bake at 400 degrees for 17 – 20 minutes in greased or lined muffin tin.

Makes 12 muffins
