WHOLE GRAIN STRAWBERRY HONEY MUFFINS
You will love these super moist strawberry muffins, sweetened with honey, for breakfast, snack time or dessert.
INGREDIENTS
- 1 1/2 cup butter, melted
- 1/2 cup warm honey
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 1/2 cup plain Greek yogurt
- 2 eggs
- 2 1/4 cups all-purpose flour
- 2/3 cup Cream of the West Roasted Wheat
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup diced fresh strawberries
- 1/2 cup strawberry jam
- 2 teaspoons lemon zest
Directions
Preheat oven to 3500 and line muffin tins with papers.
In a large bowl, beat melted butter, honey, vanilla, milk, yogurt and eggs, mixing well after each addition.
In a separate bowl whisk together dry ingredients and add slowly to liquid mixture. Mix just to combine.
Combine strawberries, jam and lemon zest. Gently fold fruit mixture into the batter. Be careful not to overmix.
Place on rack in center of oven. Bake at 3500 for 25 minutes, or until tops are slightly browned and toothpick inserted in the center of a muffin comes out with moist crumbs.
Let muffins cool for a few minutes. Serve with butter and enjoy!
